APAM BALIK




Ingredients
250gm flour
100gm sugar
300ml water
1 tsp baking soda
2 eggs
1 packet eno fruit salt

filling
butter
sugar
cream corn
grounded peanuts

Method
mix all batter ingredients & rest for at least an hour
heat up a non stick pan & pour enough batter to form a pancake
sprinkle sugar, peanuts & corn
add a little butter & cook till bottom of the pancake turned brown
fold into half & remove
now serve :D

EGG TARTS




This recipe specially goes to Lena, someone I've learned to admire & respect :))

Ingredients:
Pastry
210gm flour
1 tsp milk powder
30gm icing sugar
1/2 egg yolk
130gm cold butter

Filling
120gm castor sugar
250ml hot water
2 tbsp milk powder
1/8 tsp salt
1 tsp vinegar
1/2 tsp vanilla essence
3 eggs

method for pastry
- beat butter, icing sugar & ee yolk until creamy
- sift in flour & milk powder, to mix into a pliable dough
- cover & leave aside for 20-30 minutes
- use as needed to line pastry casings
- prick base with fork & bake at 160 deg C for 10-12 mins
- cool slightly

method for filling
- dissolve sugar in hot water & stir in milk powder and salt
- leave aside to cool
- add vanilla essence
- break eggs into clean bowl, stir slightly with fork...do not beat
- pour cooled milk mixture into eggs, stir to mix
- strain into a measuring cup. leave aside
- pour custard into prepared cases & bake at 180deg C approx 15-20 mins, till set

now, go get a cup of your favourite beverage & enjoy it with your
freshly baked egg tarts...& remember me...  :p

PINEAPPLE TARTS



This goes well with your cuppa :))

Pineapple filling ( to be made a day earlier)
2 pineapples
200g castor sugar
2cm pc cinnamon stick
1 pc star anise
2 cloves
1tbsp lime juice

Pastry dough
340g plain flour
1/2 tsp salt
1 tbsp icing sugar
225g butter
1 egg yolk
25ml ice cold water
1/2 tsp vanilla essence

to make the jam, grate pineapples. combine it with the rest of the ingredients
in a saucepan & cook over moderate heat, stirring occasionally, until mixture
is almost dry.

for dough
put sifted flour, salt & sugar in amixing bowl.
rub in butter.
beat in egg yolk & add ice cold water & essence.
mix well to form dough.
put dough in plastic bag & chill it for 30 minutes.
roll dough out to 0.5 cm thickness & shape accordingly.
add filling on it.
bake in preheated oven at 180 deg C for approx 20 minutes
cool before storing

HOKKIEN MEE



I have always loved to eat this since I was a little girl. Dad used to bring this home for supper.
For health sake, I have omitted the pieces of crispy fried lard in this recipe..

Ingredients
600g thick yellow noodles
150g sliced chicken or pork
150g squids
150g prawns
150g green mustard
1 tbsp chopped garlic

Gravy sauce
1 tsp salt
2 tbsp soya sauce
2 tbsp dark soya sauce
2 cups stock/water
1/2 tsp sugar
1/2 tsp pepper
1/2 tsp msg

Method
mix meat, squids & prawn with a little cornflour. set aside
Heat wok, stir fry garlic until fragrant
add seasoned meat & stir fry a minute or two
pour in gravy sauce , add noodles, green mustard
cover & cook until almost dry

There you have it...so easy & homecooked food is always better  ::DD

BLUEBERRY MUFFINS



This recipe is specially for my friend Joanne Woon  :))
For those of  you muffin fans, do try this too...

Ingredients
350g plain flour
2 tsp baking powder
1/4 salt
115g caster sugar
2 eggs, beaten
300ml milk
115g butter, melted
1 tsp vanilla essence
175g canned blueberries

Method
sift flour, baking powder & salt into mixing bowl, then stir in sugar
place eggs, milk butter & vanilla essence in a separate bowl & whisk well together
fold in egg mixture into the dry ingredients with a metal spoon
then gently stir in the blueberries
spoon mixture into muffin cups, about 3/4 full
bake muffins in a pre-heated oven of 200 degree C for 20-25 minutes, until well risen & lightly brown

Now...it's time to enjoy them with a cuppa tea or coffee !!!

OTAK-OTAK



Ingredients
A
500g garoupa or spanish mackerel (fillet slices only)
1/2 tsp salt
1/2 tsp anchovy stock granules

blend together
4 fresh red chillies
2-3cm galangal
2cm fresh turmeric root
5 candlenuts
2 stalks lemongrass
10 shallots
4 cloves garlic

combine
B
1 tsp shrimp paste powder
2 tbsp cornflour

seasoning
C
1/2 tsp salt
1/2 tsp sugar
1/4 tsp pepper

D
2 eggs
4-5 kaffir lime leaves..finely sliced
1/2 cup thick coconut milk

banana leaves (cut 16 x 18cm pcs)

method
season fish with A
mix ground ingredients with B & C
blend in D
put approximately 2 - 3 tbsp mixture onto banana leaf & secure with toothpick
steam or grill ( your preference) till cooked
serve with rice or bread

NYONYA FRIED CHICKEN RECIPE



Ingredients
1 chicken (chopped)

Marinade A
4 tsps curry powder
6 tsps sesame oil
1 tsp oyster sauce
2 tsps pepper
1 tsp sugar

B (blended)
2" ginger
1 stalk lemongrass
1 kaffir lime leaf
8 shallotsts

Method
Rub chicken with marinade A & B
leave aside for at least 4 hours
heat up oil & deep fry chicken 

There you have it....& now you are ready to serve your NYONYA FRIED CHICKEN...
easy isn't it...... :D
